It will come as no surprise to you that I love cake! So I am forever on the hunt for cakes that aren't loaded with sugar, but that don't compromise on taste. This one does exactly that- the hidden courgettes in this recipe add moisture and fibre and make the texture of this cake magical!

This cake is also made entirely in one Nutribullet cup, in one go. So you save on washing up too!

You’ll need:

  1. 2 medium courgettes chopped and blitzed
  2. Add 6 table spoons cocoa powder and two medium eggs and blitz
  3. Then add 1/2 a cup of tahini and 1/2 cup maple syrup plus 4 pitted dates
  4. Then add a teaspoon of baking powder and a teaspoon of bicarbonate of soda and blitz until fully combined
  5. Pour into a lined loaf tin and top with chocolate chips ( omit the chips if you’re off refined sugar)
  6. Bake on 180 for approx 50 mins or until a skewer comes out clean from the middle of the cake.
  7. Sprinkle with a touch of sea salt and enjoy!
